We have a variety on hand, white, yellow, purple, red, etc. If you store it well, it can really keep for a long time. Keep your back stock of food diversified, so that you aren’t stuck with the same beans and the same rice, if you couldn’t get anything at the store. I will pressure can some that are ready to use, but they are also just a good “stores” type product. We keep pinto, black, navy, pink, white, chickpeas – all the things. There are so many kinds, and they can be used in so many recipes. As with most of these things, also could be a great barter.īeans are just practical. We also like Redmond’s Real Salt, as well as Pink Himalayan Salt. We have standard table salt, which we mostly use for cleaning cast iron, but we COULD use it in an extreme situation for flavoring food. We keep regular old white sugar on hand because again, it keeps for a very long time, and it can be a good barter, if we ever got to such a scenario. We usually use monk fruit sweetener, but honestly, our favorite sweeteners are honey and maple syrup, which we’ll talk about in another blog post. We just dump in the bucket, and again – we’ve not encountered an issue so far. We also do not put our flours in Mylar bags. Also, some recipes call for a mix of flours, so it’s nice to keep variety. In extreme situations, food will be food, and it’s a great item for long term storage. We usually use whole wheat flour or rye flour, but we keep white flour on hand. We keep wheat berries on hand to grind fresh, but we are practical, too. We could add oxygen absorbers, but honestly, we’ve never had trouble with white rice going bad yet. We do not put the white rice in Mylar bags. We try to work through our brown rice regularly for meals. While we try to eat more brown rice than white, we do store white rice for long term. It could be longer, depending on how well you stored it. Brown rice stores 6 months to a year, in my opinion. We also have a ‘rustic’ outdoor kitchen with 2 rocket stoves (great for my woks & stews), Earthen oven (JAS Townsend Youtubes), 24×48″ cinder block table for coals for skillets and Dutch ovens, with room for the Lodge Sportsman’s Grill.People often tell me that they don’t have room for food storage or that they worry about mice, rodents and bugs. I cook a lot of Asian so we buy a lot of beans, noodles, rice, spices etc at Asian groceries, great prices. This actually is saving a bunch on grocery bills too. This works great for us with no O2 absorbers or mylar, and we replace what’s used every 2-3 months. We are set up on a 6-8 month pantry soon to be a 9-12 month, and we write the expiration date on, and rotate EVERYTHING. The chest freezer paid for itself with that. The freezer prevented another moth disaster last month, we froze 3 25# grain bags, thawed 2 days, opened outside, and found one bag had a bunch of dead moths and larva in it, the other two were fine. After 2 years, having to toss about 100+ lbs of food, and using about 30, 4 packs of pantry moth traps, they are almost all gone, but we’ll still freeze then bucket everything and keep moth traps out to monitor. Now everything goes straight in the 7 cu ft chest freezer for 3-5 days (this kills moths, larva & eggs) is thawed, checked outside, then is immediately put in buckets with Gama Seal lids. We bought a good looking 5 lb bag of semolina flour from a local grocery store, then had a mass of seed moths come blasting out when I opened it the next day.
